Complex carbs vs simple carbs. Whole grain pastas, quinoa, sweet potatos, some breads, etc. Also, if you're serious about losing weight, beginning a resistance training program is probably a good idea. Increasing muscle mass = increasing BMR. Yup, also want to add that cardio is extremely important. Good to get that endurance up a bit and lower risk of CVS disease. Plus there's the afterburner effect which burns more weight.

Plus there's the afterburner effect which burns more weight. Very true. I think a lot of guys misunderstand that cardio is absolutely needed to lose weight and be healthy. I don't know how many times I see my little brother, who lifts all the time, struggling for breath after running just half a mile with me.

I've been working out for 2 years now, and it's obvious I've gained muscle, but I can't seem to get rid of that belly fat that is hiding all my abs. I've recently started running the eliptical, burning about 600 calories per week ( I can do more) but I feel like I'm going nowhere. Perhaps my diet is the culprit

Or should I just focus on consuming the appropriate protein amount for me to build muscle while trying to make sure the total calorie intake is less than what I should have in a day (3500 I think?)

You need to bulk up (which sounds like that's what you've already done). That's why bodybuilders will eat like s*** for weeks at a time by scarfing cheeseburgers and eating ice cream. Then they "cut" and quit eating so much and lose the fat. I don't know all the details on this but there are plenty of resources on the web that you should look in to.

My big worry is that when I start losing weight, I'll lose a bunch of fat and all my muscle gains. But I guess thats unavoidable?

Perhaps my diet is the culprit It's not possible to gain muscle and lose fat at the same time. You need a caloric surplus to gain muscle and you need a caloric deficit to lose fat. 600 calories per week is nothing that would equate to like 1/6th of a pound loss if you are eating maintenance. To lose about a pound a week you would have to reduce calories by 500 per day. Use an app like myfitnesspal to track calories. I even use it to gain weight to make sure I'm not eating too much to limit fat gain.

I try and put on about 40lbs from where my ideal weight is (230ish) and then come the end of February when I'm about 270 I cut and by about July I'm in a comfortable 230ish range. I don't stop power lifting, and I don't add cardio. I just change my diet. When bulking I eat whatever I want whenever I want, today I ate 6 tacos for breakfast, for lunch I had a salad, and 6 more tacos. For dinner I'll probably do a 6 egg omelette loaded with veg and some bacon. I also work as a heavy equipment tech, I lift heavy s*** all day and I power lift. My BMR last summer was something around 3250 calories a day, to maintain my weight. When I cut I'm at about 2600 and when I bulk I push 4000. My cut is keto for two months and then paleo for 4-6 depending on how I feel. This is the first year that I've bulked with a heavy carb load and I feel like crap, generally I just eat more meat, dairy and saturated fats with something around 50g of carbs a day. Before people come on saying "eat healthier" my blood pressure is great, my cholesterol is great and I have no major health issues other than I'm a heavy guy and chairs can break.

But I guess thats unavoidable? That's a good question. If you cut your calories you'll lose your fat first. And if you eat the right things (even when cutting) it will help you maintain muscle. Once you get where you want then you eat in a way to maintain. I'm just starting all of this myself so I don't have the greatest knowledge but I think if you do some research on bulking/cutting/maintaining you'll find all sorts of good info.
