Why? Taking 3 years for $50MM ($16.6 AAV) likely covers him to the end of his career (throw in an option year) vs 1 guaranteed year at 17.2 where he could risk further injury, further decline and a lot less future money. Even though he's had an off year it's probably his best chance to cash in. It's a super risky move to try and rebuild value when the age clock is against you.
I'd say if Bautista was chasing a $200MM deal none of this would matter but he'll likely see offers in the $40-$50MM range and if the Rangers outbid everyone, option 2 is probably going to look just as nice.
It shouldn't shock anyone that EE's agent would shoot for the moon. You don't start negotations at $90MM and then come down to $75. You start above anyone's number and come down to the highest bidder.
