the one that really freaked me out was people ordering a steak blue rare. Had these 2 really strange characters who used to come in once a week and the one wanted blue rare which is literally 15 seconds on each side and the other guy wanted only 15 on one side. I used to throw it on the grill and then hold it under the heat lamp a few seconds and they loved it... yuck. I'm a rare steak guy but I want it at least warm in the middle
on the other side there were people who ordered the thickest steak on the menu well done... you can't do it without burning the things unless you're smart. A few minutes on each side, braise the sides, throw it in the microwave for 2 minutes and have at it. people who truly like and appreciate a good steak would know something was up, but they wouldn't order a 2" thick steak well done either.
